I'm on a Mexican food kick. For a week I ...Yum! I'm on a Mexican food kick. For a week I made taco salads. If you like those fried shells, Roth's has them in the veggie/fruit area. I use ground turkey instead of beef. And I add black beens to the meat to cook once it's browned. Then the usual shredded lettuce and shredded cheese. I top it with the fresh pico de gallo at Roth's next to the salad bags. SO GOOD!<br /><br />Last week I got some bell peppers and made fajitas. They were a bit different than usual though. I got some low carb wheat tortillas from Trader Joe's. Ground turkey again. Added black beans again. Fajita seasoning instead of taco. But I cooked up a whole onion and 3 bell peppers. Then bought a bag of shredded cabbage. Mixed the hot stuff with some cold shredded cabbage before serving. Topped with pico de gallo.
